Watermelon and Feta Salad
2 lbs watermelon cubed 1inch x 1inch
½ lb Grape tomatoes halved
4 oz crumbled feta cheese
3 cups arugula
Juice of 2 limes
3 tablespoons olive oil
1 tablespoon Agave syrup
¾ tsp sea salt adjust as necessary to taste
A pinch or 2 of Cayenne pepper to your taste
½ thinly sliced red onion optional
Combine lime juice, Cayenne pepper, salt, Agave syrup and olive oil set aside.
Combine remaining ingredients then toss with dressing. Serve on its own or as a side to grilled chicken or fish.
Serves 6 to 10
